How long will it take pemmican last in storage, and how much should you eat per day to stay healthy and energized?

Pemmican will last in storage for up to 25 years if kept in a sealed container. To stay healthy and energized, eat one ounce of pemmican per day. Pemmican can also be used as a protein supplement – add one tablespoon to your daily diet.

Making Pemmican

  • The first step to making pemmican is to find some lean meat and cut it into thin strips. 
  • The next step is to dry out the meat in the sun or over a fire. When the meat has been dried, you should pound it so that it becomes very fine and powdery. 
  • Next, take fat from an animal (e.g., deer) and boil it until all of the water evaporates off of the top layer; this will help preserve your pemmican for longer periods of time if you are using something besides beef tallow as your fat source (i.e., lard). 
  • Then grind up some berries such as blueberries, cranberries, raspberries, etc. Finally, mix together everything except for one ingredient – seeds. 
  • You can add in flax seeds, chia seeds, pumpkin seeds as well; these will provide omega-three fatty acids, which are very important for brain development and function!

To make pemmican, you need to dry out the meat. 

  • This is done over a fire or by hanging it from trees with string so that air can circulate around both sides of the strips and help them dry faster (e.g., sun). 
  • Next, pound up berries such as blueberries into pulp with mortar & pestle until completely mashed beyond recognition, then mix this together alongside your fat source (i.e., lard) using equal parts at room temperature, so they blend evenly like cream cheese frosting consistency before adding any other ingredients such as meat, powdered milk, chocolate chips or nuts. 
  • You can make pemmican using a variety of different ingredients like beef jerky and blueberries, but there are some things you should keep in mind when choosing your protein source: It must be high-fat content such as lard because it will help preserve the food longer than if you just used lean cuts of meat alone without any type of fats added to them at all so that way we don’t have to worry about rancidification happening faster. 
  • Also, try adding salt for flavor enhancement which could slow down spoilage. Sodium benzoate has been shown to inhibit microbial growth, so this would work well if added to your recipe.
  • You can also add other spices such as cinnamon or cloves, which will also give more flavor while acting as antioxidants that can prevent rancidification too.
